If you have been following our work through the years, you’ll no doubt have noticed that coffees from Guatemala are a big part of our menu every summer. This season, we are excited to offer several lots from producers whose coffee we are working with for the first time. The first of these is from La Joya, a six hectare farm in the Huehuetenango region owned and managed by husband and wife Rudy and Floridalma Castillo. Rudy inherited part of his family’s farm in 1996 and decided to use this plot of land to begin cultivating coffee. While he acknowledges that this was a challenging venture at first, he says “the support of my wife and my family was essential to get to where we are today.” Currently, the Castillos are improving processes at the farm, doing soil analysis and making harvest and post-harvest practices even better - a strategy that focuses on quality and sustainability to ensure a healthy farm business for the future.
This lot is a field blend of Caturra, Bourbon and Catuai varieties and presents a sweet and balanced cup profile with notes of apple, chocolate and brown sugar.
