Finca La Esperanza is a 2.5 hectare farm in Timaná, Huila owned and managed by Brayan Joven, a third generation coffee grower. Brayan tends to the harvest of around 6,000 coffee trees, the majority of which are Pink Bourbon, Gesha, Chiroso and Caturra. Brayan’s brother and father also own farms nearby and they work collaboratively, sharing responsibilities and efficiently dividing labor amongst their respective properties.
Brayan processes his coffee in batches, or ‘cochadas,’ throughout the week. On Monday, coffee cherries are picked and left to ferment overnight. On Tuesday, he pulps, or removes the skin, from the previous days cherries and and picks more fresh cherry, repeating this process until Friday when all the batches are washed together. This results in a very complex fermentation gradient, with fermentation times ranging from 12-96 hours. After the coffee is washed, it is dried in a greenhouse structure for around 20 days.
This variety separation is a stunning example of the Pink Bourbon variety, revealing layers of ripe tropical fruit and juicy citrus with an intense, jammy body.
