“Suukala” means sugary and sweet in Wayuu, a language spoken by many of the Indigenous people of northern Colombia, and this coffee absolutely lives up to the name with layers of stone fruit, citrus and tropical notes intertwined with a candy-like sweetness.
This lot comes from the Café Agrario producers association in Tolima, a group of 35 families with farms that range in size from 5-40 hectares. These growers process their harvests with a fully washed method which begins by floating fresh coffee fruit in water to remove under or overripe cherries. The coffee is then pulped and left to ferment overnight for 16-20 hours before being washed and dried in parabolic solar dryers for 8-12 days.
The farmers of Café Agrario have been working with their exporting partner to learn how to evaluate and grade their own coffees, a skill that not only gives them a more complete understanding of their own product, but also helps them effectively produce coffees that can meet certain flavor profiles, cup scores and price points.
Orders placed Monday - Thursday by 9am will be roasted and shipped the same day. Orders placed after our daily or weekly cutoff will be roasted the next scheduled production day. All online orders are shipped within 24 hours of roasting.
