This coffee comes to us from Delicia Rojas’ Finca El Choche, an 8-hectare farm located within the Alto Mayo protected forest in northern Peru. The climate here creates temperate days and crisp, cold nights that are ideal for coffee production. Working in concert with this unique microclimate and the Typica and Caturra varieties she grows, Delicia produces some simply beautiful coffees. We taste a sweet and creamy cup profile with notes of pear, stone fruit and caramelized sugar. 
At Finca El Choche the harvest begins in July and ends in October. After hand picking ripe fruit, coffees are pulped the same day and transferred into wooden basins to begin a fermentation stage that will last between 35-40 hours. The coffee is washed clean and then transferred to raised beds in a parabolic structure to dry for 12-14 days.
Orders placed Monday - Thursday by 6am will be roasted and shipped the same day. Orders placed after our daily or weekly cutoff will be roasted the next scheduled production day. All online orders are shipped within 24 hours of roasting.
