This is our second consecutive year to purchase coffee from Peruvian producer Edwar Guivin Fernandez and we are excited to make this our first release from this year's harvest. We find this season’s lot perfectly demonstrates everything we look for when sourcing from the Amazonas region: a sweet, structured and clean cup with notes of apple, citrus and almond. 
Edwar’s farm El Refugio del Mono is located within the Alto Mayo protected forest which spans the border between the Amazonas and San Martin departments of Northern Peru, an area with a cold and humid microclimate as elevations soar up to 3,400 meters above sea level. Even at 2,300 meters, which is about the highest coffee grows in this region, this environment slows the maturation of coffee fruit as it develops on the tree, leading to enhanced sweetness and complex acidity. Likewise, these conditions lengthen the time required to dry coffees after they have been processed, and while this requires extra care and attention, a gentle drying stage is critical for consistency and stability, preserving the lovely flavors we find in these coffees. 
Orders placed Monday - Thursday by 6am will be roasted and shipped the same day. Orders placed after our daily or weekly cutoff will be roasted the next scheduled production day. All online orders are shipped within 24 hours of roasting.
