Finca La Toronja is a 5 hectare farm in Loja, Ecuador managed by Teodomiro Jiménez, a producer who has been around coffee cultivation since childhood, inheriting this land and his agricultural skills from his family. After Loja’s coffee trees were devastated by coffee leaf rust in 2012, Teodomiro completely redeveloped the farm, planting an array of varieties: classics like Caturra and Typica, the disease-resistant Sarchimor, as well as Mejorado, a newly identified cultivar unique to Ecuador that is thought to be a hybrid of Bourbon and an Ethiopian heirloom variety. This field blend lot from Finca La Toronja is bursting with fresh fruit flavors and incredible sweetness. Expect a vibrant and expressive cup profile with notes of red berry, grape and refined sugar.
Teodomiro’s process begins with harvesting only fully ripe cherries which undergo two stages of fermentation: first, whole cherries ferment in plastic tanks for two days, then after depulping, the coffee ferments again for 48 hours. After washing and draining, it is dried for 15–20 days in shaded greenhouse structures, with constant movement to ensure an even drying.
Orders placed Monday - Thursday by 6am will be roasted and shipped the same day. Orders placed after our daily or weekly cutoff will be roasted the next scheduled production day. All online orders are shipped within 24 hours of roasting.
