This exceptional coffee comes to us from the Goro washing station in the Uraga district of southern Ethiopia’s Guji zone. This site is owned by Kuri Mountain Coffee and since taking over operations in 2022 they’ve invested in new equipment to improve processing and implemented water management protocols to make the station more environmentally sustainable. Kuri Mountain’s general manager Habtamu Fikadu Aga has developed a reputation as a highly skilled operator and processor and this lot perfectly demonstrates as to why. Goro shines in the cup with flavors of citrus, vanilla, stone fruit and elegant florals.
Processing of washed coffees at the Goro site is simple but precise. After smallholder farmers in the area deliver freshly picked coffee fruit to the washing station, it is pulped so as to leave about 10% of the mucilage remaining on each seed. After a 24 hour fermentation, the coffee is thoroughly hand washed and transferred to shaded raised beds for 9-12 days, being constantly turned and inspected to ensure even and consistent drying.
