In this particular lot we find a vibrant and sweet profile with notes of cooked berries, crisp pome fruit and caramelized sugar.

Saul has been growing coffee on his farm Finca Idania since the year 2000. From the beginning, he has placed an emphasis on producing very high quality lots, as evidenced by his decision to cultivate prized varieties like Pacamara, Gesha, Pacas and Bourbon. Processing on this lot was traditional, allowing the character of the variety to really shine through: freshly pulped coffee fruit was fermented for 18-24 hours before being washed and dried on raised beds for 25 days.

Saul’s coffee was exported by CafeNor, a fully carbon neutral mill in the Metapan region of northern El Salvador owned by Alejandro and Rosa Maria Valiente, who passed along this message, directly from Saul: “We would like to thank Cafetalera del Norte in advance for their support, as well as those who purchase our coffee; knowing this motivates us to keep up our efforts to cultivate specialty coffee.”
