Fresh crop coffees from Peru just arrived and we are glad to begin working with lots from the recent harvest in Amazonas. This is our second time to present coffee from producer Amparito Valle Rojas, whose farm El Rollo lies within the protected forest of Alto Mayo. In this selection we are tasting flavors of citrus and stone fruit with a syrupy and high-intensity sweetness.
This lot began with ripe coffee that was picked by hand. After being pulped to remove the outer layer of fruit, it fermented for 18-22 hours before being washed and then dried on patios or in parabolic driers for 12-22 days.
We have been sourcing coffee from the Amazonas region of Peru for the better part of a decade, not only for its consistently sweet and balanced profile, but also because of the care and intention that farmers here put towards ensuring that their production methods exist in total balance with the preservation of the ecosystem. Since the Alto Mayo forest is home to a huge cross-section of native Peruvian wildlife as well as many Amazon River tributaries, these efforts are of the upmost importance.
