This is our second time to purchase coffee from the community of San Jose Ozolotepec in the southern coastal mountains of Oaxaca. We love the ‘sessionable’ profile of this lot and find it’s flavors of red and purple dried fruits and creamy chocolate to be well suited for a go-to daily drinker.
Land and processing equipment in San Juan Ozolotepec is shared amongst producers, with each farmer managing plots between 1-5 hectares where original lines of Bourbon, Typica and their various descendants are grown. Ripe coffee fruit is handpicked, pulped, and fermented for 12-24 hours in open wooden tanks. After being thoroughly washed it takes between 4-7 days for the coffee to fully dry on patios and woven fiber mats called petate.
